Sustainable Cacao Farming: Protecting the Future of Chocolate

The future of chocolate depends on a single, fragile crop: Theobroma cacao, the "food of the gods." And that crop is under threat. Climate change is pushing cacao-growing regions toward higher altitudes, pests are expanding their range, and economic pressures continue to squeeze the smallholder farmers who produce over ninety percent of the world's cacao. Without urgent action, the chocolate we love could become scarcer, more expensive, and less diverse. At Maya Chocolate, sustainability isn't a marketing campaign. It's the foundation of our entire business model. We cannot make great single-origin chocolate without healthy farms, skilled farmers, and thriving ecosystems. Here is how we approach the challenge, and why we believe ethical chocolate is the only chocolate worth making.

Direct Trade: Beyond Fair Trade

Fair Trade certification sets a minimum price, which is better than nothing, but it doesn't address the deeper structural issues that keep cacao farmers in poverty. We practice direct trade: we visit every origin, meet every farming cooperative, and negotiate prices that are significantly above Fair Trade minimums. In Tanzania's Kilombero Valley, we pay our partner farmers forty percent above the Fair Trade floor price for their Trinitario cacao. In Peru's Marañón Canyon, our premium ensures that Criollo farmers can afford to maintain their ancient, low-yield trees rather than replacing them with higher-yielding but less flavourful hybrids. This isn't charity. It's enlightened self-interest. Farmers who earn a living wage invest in their land, their fermentation practices, and their drying equipment, all of which directly improves bean quality. Our Andean Salt 65% owes its extraordinary flavour to the care that Marañón farmers put into every stage of post-harvest processing.

Agroforestry: Farming with the Forest

Conventional cacao farming often involves clearing rainforest to plant monoculture cacao plantations. This destroys biodiversity, depletes soil, and makes crops more vulnerable to disease. We partner exclusively with farms that practice agroforestry, growing cacao under a canopy of native trees alongside bananas, spices, and timber species. This approach mimics the natural forest structure, providing habitat for birds and pollinators, regulating temperature and humidity, and building healthy soil that requires fewer inputs. The result is not just better environmental outcomes, but better chocolate. Cacao grown in biodiverse agroforestry systems develops more complex flavour profiles than monoculture beans, because the trees draw nutrients from a richer, more varied soil ecosystem.

Climate Adaptation

Rising temperatures are already shifting cacao-growing zones. By 2050, many of today's prime cacao regions could become unsuitable for cultivation. We're investing in climate adaptation at every level: supporting farmers in grafting more heat-tolerant rootstocks, planting shade trees to reduce canopy temperature, and diversifying income sources so that farmers aren't solely dependent on cacao. In Colombia's Sierra Nevada, our partner Arhuaco farmers have planted over ten thousand native trees alongside their cacao, creating a cooler microclimate that protects their Criollo trees from heat stress. The resulting beans, used in our Colombian 58%, are some of the most elegant and aromatic we've ever sourced.

Zero-Waste Craftsmanship

Sustainability extends to our workshop, too. We use every part of the bean: the nibs become chocolate, the husks are composted or used as garden mulch, and the cocoa butter expressed during conching is reserved for our white chocolate. Our packaging is plastic-free, Amber kraft paper and gold foil that biodegrades, and our shipping materials are one hundred percent recycled cardboard.
